This lemon chicken recipe features chicken coated with lots of fresh herbs and resting in a creamy, lemon sauce. It is elegant, fresh tasting and easy to prepare!
I used chicken breast as well as chicken thighs for this lemon chicken recipe. Each piece of chicken is coated with fresh herbs, salt, and pepper and cooked until brown. Then I made super easy and creamy lemon sauce to go with my herb-flavored chicken. The sauce is silky and smooth and the chicken is tender, plump and the quality shines through. The chicken was tasted so good, it actually tasted like chicken. What I mean by that is, this is the first time my son said: “mom, this chicken tastes amazing”. I’m so proud, his taste buds are finally coming around!
Heat the oil and butter in a large skillet. Combine the herbs and coat the chicken pieces with the herb mixture and cover with salt and pepper. Place the chicken in the pan and cook until golden brown and juices run clear (or 165 degrees), about 20 minutes per side for bone-in chicken and 6-8 minutes for boneless meat. Be sure to start your bone-in meat before any boneless meat.
Remove the chicken and keep warm. Add the butter to the hot pan; whisk in the flour. Stir until combined. Slowly whisk in the chicken broth, the cream and the lemon juice, and salt, stirring until all the ingredients are incorporated.
Place the chicken into the sauce and heat another 2 minutes, sprinkle the chicken with fresh lemon zest just before serving.
